PAGO DE LOS BALAGUESES CHARDONNAY

Description:
The grapes are hand-harvested at their optimal ripeness. Destemmed and cold pre-macerated in stainless steel tanks for a few hours to obtain the free-run juice. Subsequent fermentation in new French oak barrels previously immersed in hot water to preserve the freshness of the grapes. Once finished, the lees are stirred during the aging period of approximately 7 months to achieve a better texture. This maximizes the expression of the grape variety and the expressiveness of the terroir.
Tasting Notes:
Straw yellow color with golden reflections, dense and bright. Intense aroma of ripe tropical fruit, citrus, floral, soft spices (vanilla), and smoke. On the palate, it has a good attack, is silky and unctuous. Balanced with good acidity, the sensation of ripe tropical fruit and the memory of citrus zest return, with a subtly smoky finish and good persistence.
Pairing suggestions:
Stewed fish, seafood paella and pasta with sauce, duck and game birds, aged cheeses and foie gras.
