Description:
The grapes are hand-harvested at optimal ripeness, destemmed and not crushed, then undergo cold pre-maceration before fermentation with indigenous yeast at a controlled temperature not exceeding 28ºC, with gentle pump-overs and pigeage to break the skins. The wine then macerates with the skins for approximately twenty more days for subsequent malolactic fermentation in French and Hungarian oak barrels, which, once completed, undergo aging for 10-12 months: 70% in new barrels and 30% in used barrels. They then spend a minimum of 6 months in bottle before commercialization. This process maximizes the expressiveness of the terroir and the grape variety, in this case Syrah.

Tasting Notes:
Intense ruby red with purple reflections, this powerful Syrah displays a strong aromatic intensity of ripe red and black fruit, with floral notes of violets, subtle balsamic, and Asian spices derived from the oak. On the palate, the abundant fruity character of black and red cherries provides creamy complexity, with soft tannins that will become even more polished with time in the bottle. A well-balanced, structured wine with a fine and elegant finish.
